Bikini Recipe

Yields 10 people

For the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Premix (makes 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Put the listed components into a pan, heat until it reaches a gentle boil, stirring so the sugar melts. After that, take off the burner and leave to reach room temperature fully. Pour into a sealable bottle, seal and refrigerate it in the fridge, it can be stored for around a month.

Preparing the Cocktail Base: Combine the specified liquids in a large bottle, leave to sit for 60 minutes, then strain preferably using a fine cloth, to ensure it's completely strained.

When ready to serve: Measure 85ml of the batch mix into your cocktail shaker packed with ice, and agitate gently for about 60 seconds until cold. Filter to a chilled martini glass or equivalent, garnish with the cranberries adding the final touch with a light spray of mandarin oil above the glass.
